Serves 10 guests

Ingredients for the Citrus Syrup (makes 750ml)

300ml fresh clementine juice
200ml recently pressed lemon juice
500g granulated sugar

Ingredients for the Drink (makes 850ml, serving 10)

400ml decent vodka
100ml dry gin
150ml peach-flavored liqueur
200ml clementine cordial (as made above)
Fresh cranberries, to garnish
Mandarin essential oil, for finishing

Method

For the Syrup: Place every components inside a saucepan, bring to a light boil, stirring until the sugar dissolves. Then, turn off the burner and leave to cool down completely. Pour to a sterilised bottle, cap it and refrigerate it in the refrigerator, where it will keep for about four weeks.

For the Premix: Combine all the spirits and syrup into a large bottle, leave to sit for one hour, then filter it best through a fine cloth, so it's completely strained.

For serving: Measure 85ml of your premix into a mixing glass packed with ice, and stir lightly for one minute until cold. Filter to a cold coupe glass or a similar vessel, top with the cranberries and finish by giving it a quick spritz with the mandarin essence over the drink.
